Seafood Pasta


Since I mostly work in the evenings, it means I've been missing out on the social aspect of eating a meal together at home. So recently we've been trying to eat together more during the day. I made this for Dad and I the other day.

This makes enough for 2 hungry people but multiply for as many people as you're feeding.
Ingredients
225g linguini
2 cloves of garlic
1 medium sized onion
1 generous glass of white wine
150g brown crab meat (I buy it by the pot from the supermarket)
250g raw mixed seafood (I used scallops, prawns and squid but use whatever you like)
20ml light olive oil
Salt and pepper to taste
Parmesan to top at the end

Start by salting your pasta water and getting it on the boil and chopping up the garlic and onion.


Heat the olive oil in a large frying pan and start frying the onion.


Fry for about 5 minutes over a low heat.

When the pasta water is boiling put the pasta in, depending on what type of pasta using you might want to wait a bit but mine takes about 10-12 mins (this will depend on whether you're using fresh or dried pasta)


To the onion, add the garlic and mixed seafood and cook over a medium heat for 6-7 mins until your seafood becomes opaque.


When those are cooked through add the crab meat and white wine and let it reduce down for a couple of minutes until the pasta is finished cooking.


When your pasta is cooked save a mug full of the water and then drain. Add the water to the sauce and cook fro another minute before adding the pasta to the pan and tossing in the sauce. Remove from the heat and serve.


Add salt and pepper to taste, a sprinkle of parmesan, a squeeze of lemon juice, whatever you fancy really!
