Baked Kale
Warning, this is going to be a very green blog post. I never thought I'd say this but I freaking love kale. When steamed I think it tastes and smells a bit like feet to be honest, but baking kale is a total game changer. Honestly, I'd gladly eat this as a snack, with a meal or just any time of the day really. This recipe is for two people so just multiply as needed.
Ingredients
150g kale
50ml extra virgin olive oil
half a lemon
1 teaspoon sea salt
pepper
Pre-heat the oven to 180C.
Lay you're kale out in a deep bottomed (tee-hee) roasting pan.
Pour over the olive oil and squeeze over a quarter of a lemon.
Season with salt and pepper and bake in the oven for 10 mins.
Once its cooked, it should be crispy on the edges but still a bit tender, add the rest of your lemon juice, and again season to taste.
Serve warm or cold. Acts as a great accompaniment to a dish, or as a snack. I'm also thinking of making it into a salad, maybe with some roasted carrots and feta. Mmmmm...
